According to the ‘Forks over Knives‘ website, a whole-food, plant-based diet is centred on whole, unrefined or minimally refined plants. It’s a diet based on fruits, vegetables, tubers, whole grains, and legumes as well as excluding or minimizing meat, dairy, and eggs, as well as highly refined foods.
Personal note: While we have not wholly excluded meat from our diet (at the time of this post), we have significantly reduced our consumption, and both our bodies and budget appreciate the efforts.
